3 Fonteinen Oude Geuze is a blend of one-, two-, and three-year old lambics. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution of the ecosystem in the bottle result in a distinctively complex and elegant natural beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions in the blend, etc. When cellared properly, 3 Fonteinen Oude Geuze can be aged for several decades. The aromas and flavours will evolve from notes of vibrant fresh citrus, zesty and grassy notes to a mellow, oaky, stone fruit bouquet as the lambic continues to develop with time. Lambic and Geuze are living, cultural heritage rooted in the Zenne valley! Taste carefully and you will uncover a fruity grapefruit and ginger flavour with a hint of Muscat grapes. You’ll be pleasantly surprised by the wholehearted body and the sublime finish – an explosion of Germanic and Romance cultures.
Boon Geuze Mariage Parfait has an alcohol content of 8%. It consists of 95% mild lambic, aged at least three years and specially reserved for this purpose, and 5% young lambic. The latter provides the fermentable sugars and wild yeasts. After mixing in a vessel of 25,000 litres, the wort (unfermented mixture) is filtered and chilled. If we are bottling, we bring it back to fermentation temperature. The bottles are placed in a climate-controlled space for the secondary fermentation. This is followed by maturing at low temperature for at least 6 months. Want to know the bottling date? Simply subtract 20 years from the “best before” date! The soft, mildly sour berry taste, harmonises with the oak barrels’ aromas in which Geuze Mariage Parfait has ripen. The body speaks of vanilla followed by a bitter aftertaste of cloves that becomes increasingly intense. Sublime.
Again, the basic old and young lambic are matured in oak casks. But here we add to one year-old lambic about 400 grams of real cherries per litre. This creates a second fermentation in the casks. Oude Kriek Boon then undergoes a further fermentation in the bottle and has an alcohol volume of 6.5%. After several months, the flavour has matured to the desired taste. Oude Kriek Boon is a test of your patience. It should lie about 2 years in the bottle. At first, it tastes of fruit, especially sour cherries. Oude Kriek Boon eventually evolves into a deep taste reminiscent of Port or Madeira wine. This is kriek at its best.
